Let’s make Dhofari Manshab, a hidden gem from the southern region of Oman. Meaty fried fish on a bit of aromatic rice cooked in coconut milk. The flavor truly resembles the tropical nature of the region.
Ingredients:
- 1 kg Fsih
- 2 cups Canary Basmati rice
- 4 cups water
- 1 tbsp ghee
- 2 Onions
- whole garlic
- 2 cups coconut milk
- Salt to taste
Preparation Time: 30 minutes
Instructions:
- Wash and soak 2 cups of Canari Basmati Rice for 30 minutes.
- Season some lovely kingfish steaks with salt, pepper, coriander and chili powder. You can use tuna steaks or any meaty fish you like
- Shallow fry the fish for 5 minutes on both sides or till dark golden brown. You can also grill the fish if you want.
- Chop 2 onions, dice a whole head of garlic and sauté them with a tablespoon of ghee, along with some aromatics.
- Add the rice.
- Give it a hefty pinch of salt.
- Add a can or 2 cups of coconut milk
- Add some water till the rice is almost submerged and once it boils drop the heat to a simmer cover and let it cook for 20 minutes.
- Place the fish steaks on top of the rice.
Chef’s Tip: Serve it with your favorite chili sauce and enjoy.
