Majboos is a popular Omani rice dish made with chicken or lamb and spices.
Ingredients:
- 1 kg chicken (or lamb)
- 2 cups Canary Basmati rice
- 4 cups water
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tomatoes, chopped
- 2 tsp ground turmeric
- 2 tsp ground cumin
- 1 cinnamon stick
- 3 cardamom pods
- Salt to taste
- Fresh coriander for garnish
Preparation Time: 1 hour
Instructions:
- In a large pot, sauté onions, garlic, and spices until fragrant.
- Add chicken or lamb and cook until browned. Add tomatoes and continue cooking until soft.
- Pour in water, cover, and let simmer for 20 minutes.
- Meanwhile, wash and soak the Canary Basmati rice for 30 minutes.
- Add the rice to the pot, cover, and cook for another 20 minutes until the rice is fluffy.
- Garnish with fresh coriander and serve.
