Omani Majboos

Majboos is a popular Omani rice dish made with chicken or lamb and spices.

Ingredients:

  • 1 kg chicken (or lamb)
  • 2 cups Canary Basmati rice
  • 4 cups water
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, chopped
  • 2 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 cinnamon stick
  • 3 cardamom pods
  • Salt to taste
  • Fresh coriander for garnish

Preparation Time: 1 hour

Instructions:

  1. In a large pot, sauté onions, garlic, and spices until fragrant.
  2. Add chicken or lamb and cook until browned. Add tomatoes and continue cooking until soft.
  3. Pour in water, cover, and let simmer for 20 minutes.
  4. Meanwhile, wash and soak the Canary Basmati rice for 30 minutes.
  5. Add the rice to the pot, cover, and cook for another 20 minutes until the rice is fluffy.
  6. Garnish with fresh coriander and serve.

Chef’s Tip: Serve with a side of fresh yogurt or salad for an authentic Omani touch.
